Besan chilla is a quick breakfast and provides some protein because besan is made from chickpeas. Adding vegetables and using little oil keeps it practical for everyday meals.
Method
BatterAdd water gradually to besan to form a smooth medium-thick batter.
VegetablesMix in onion, tomato, coriander, carrot or spinach.
SpicesUse cumin, ajwain, turmeric and chilli to taste.
PanSpread on a moderately hot pan and use a little oil around the edges.
CookingFlip once the top has set and cook thoroughly through the centre.
Important cautions
Keep in mind- Yogurt and salad can make the meal more balanced.
- Do not eat raw besan batter; cook the chilla thoroughly.
Nutrition of besan
Besan is made from chickpeas and generally provides more protein and fibre than refined wheat flour. Overall nutrition still depends on portion size, oil, vegetables and accompaniments.
A lump-free batter
First mix besan with about half the water to make a thick smooth paste, then add the rest gradually. This helps reduce lumps. Do not make it as thin as water.
Choosing vegetables
Onion, tomato, spinach, carrot, coriander and capsicum work well. Chop them finely so the chilla is easier to spread and flip.
Pan temperature
Keep the pan at medium heat. A cold pan encourages sticking, while an overheated pan browns the outside too quickly. There is no need for lots of oil.
Cook the centre
Flip once the top is no longer wet and the edges are set. A thicker chilla needs more time on medium-low heat. Make sure the centre is cooked.
Balance the meal
One or two chillas with yogurt, mint chutney and vegetables or salad can make a useful breakfast. Add fruit or milk according to energy needs.
For children
Reduce chilli, chop vegetables very finely and make smaller chillas. Check ingredients carefully for allergies or special dietary needs.
Small, sensible changes are easier to sustain over time.
