आयुर्वेद भोजन के स्वाद को छह रसों—मधुर, अम्ल, लवण, कटु, तिक्त और कषाय—में बांटता है। यह पारंपरिक ढांचा भोजन की विविधता समझने का एक तरीका है; इसे आधुनिक पोषण का विकल्प नहीं समझना चाहिए।

छह रस को आधुनिक थाली में कैसे समझें?
इस अवधारणा का उपयोग स्वाद की विविधता देखने के लिए किया जा सकता है। दाल-चावल, सब्जी, दही, सलाद और थोड़ी चटनी वाली थाली में कई स्वाद स्वाभाविक रूप से आते हैं। हर स्वाद के लिए अलग पदार्थ जोड़ना जरूरी नहीं।
मधुर का मतलब केवल चीनी नहीं
आयुर्वेदिक वर्गीकरण में अनाज, दूध और कई स्टार्चयुक्त खाद्य मधुर रस में आते हैं। इसलिए मधुर रस चाहिए का अर्थ अतिरिक्त मिठाई खाना नहीं है। आधुनिक स्वास्थ्य दृष्टि से अतिरिक्त चीनी सीमित रखना उचित है।
लवण और सोडियम
नमकीन स्वाद भोजन को आकर्षक बनाता है, लेकिन अधिक सोडियम उच्च रक्तचाप के जोखिम से जुड़ा है। अचार, नमकीन, पैकेज्ड स्नैक और तैयार सॉस से भी सोडियम आता है।
कटु और अम्ल में सहनशीलता
मिर्च, अदरक, नींबू और इमली स्वाद बढ़ाते हैं, पर एसिड रिफ्लक्स, मुंह के छाले या पेट की संवेदनशीलता वाले व्यक्ति मात्रा अपनी सहनशीलता के अनुसार रखें।
तिक्त और कषाय
करेला, मेथी, पत्तेदार सब्जियां, दालें और कुछ फल अलग स्वाद लाते हैं। केवल दोष संतुलन के लिए अत्यधिक कड़वा भोजन लेना जरूरी नहीं।
रस बनाम पोषण
छह रस स्वाद का पारंपरिक ढांचा हैं। भोजन पर्याप्त है या नहीं, यह जानने के लिए प्रोटीन, ऊर्जा, फाइबर, विटामिन, खनिज और व्यक्तिगत जरूरतें भी देखनी होंगी।

Important cautions
Keep in mind- Every meal does not have to contain all six tastes.
- Overall nutrition, portion size and health needs matter more than taste categories.
Using the six tastes in a modern plate
The framework can be used to notice flavour variety. A normal plate of dal-rice, vegetables, yogurt, salad and a little chutney may naturally contain several tastes. There is no need to add a separate item merely to tick off every taste.
Sweet does not mean added sugar
In Ayurvedic classification, grains, milk and many starchy foods fall under madhura rasa. Therefore including sweet taste does not mean eating extra sweets. Modern health guidance still supports limiting added sugar.
Salty taste and sodium
Salt makes food appealing, but excessive sodium is associated with higher blood-pressure risk. Pickles, savoury snacks, packaged foods and sauces can contribute substantial sodium.
Tolerance to pungent and sour foods
Chilli, ginger, lemon and tamarind add flavour, but people with reflux, mouth ulcers or sensitive stomachs may need smaller amounts.
Bitter and astringent variety
Bitter gourd, fenugreek, leafy vegetables, legumes and some fruits add different flavour profiles. Extreme amounts are unnecessary solely to balance a dosha.
Taste versus nutrition
The six tastes are a traditional sensory framework. Adequacy still needs to consider protein, energy, fibre, vitamins, minerals and individual medical requirements.
Small, sensible changes are easier to sustain over time.
